Yogurt Ice Cream with Almonds

  • 1 cup almonds, whole
  • 4 cups plain Greek yogurt, sugar-free
  • 1/4 cups almond milk
  • 1/2 cups honey

  • Preheat the oven to 180 °C
  • Place the almonds on a baking tray and spread them evenly across the surface so they brown evenly while baking. Bake the almonds for 8 minutes at 180 °C, but remember to stir them occasionally with a wooden spatula for an even golden color. Remove from the oven.
  • Chop some almonds with a knife and set aside a bit for decorating the ice cream.
  • Mix the Greek yogurt with almond milk, honey, and chopped almonds in a bowl. Place in a baking dish and freeze for at least 6 hours.
  • Serve the yogurt ice cream with almonds in ice cream cones and decorate with a bit of sliced and toasted almonds.
