Chocolate Mousse with Raspberry

  • 1 cup whipping cream, hot, for the mousse
  • 2 cups semisweet chocolate, chopped into small pieces, for the mousse
  • 2 packages Raspberries - Berries Paradise®, 170 g each
  • 1/4 cups lime juice, for the raspberry
  • 1/4 cups sugar, for the raspberry
  • 1 3/4 cups water, for the raspberry
  • 28 grams unflavored gelatin powder, hydrated and melted (4 envelopes, each envelope contains 7g)

  • For the mousse: place the hot heavy cream in a bowl, then add the chopped chocolate and incorporate using a silicone spatula until you obtain a uniform mixture. Once integrated, refrigerate for 30 minutes or until solid.
  • After the refrigeration time, beat the chocolate mixture with a hand mixer using a whisk attachment to incorporate air into the preparation and achieve double its volume and a thick consistency. Don’t worry if the color of the mousse decreases a bit; it's normal for this preparation.
  • Cover the bottom of a 20-centimeter diameter pastry ring with cling film, so you have a base, then grease the sides with a little cooking spray. Once the ring is ready, pour the chocolate mousse until it fills half of the capacity and flatten it as much as possible with a spoon or spatula to obtain a uniform surface. Refrigerate the chocolate mousse again.
  • While the mousse is in refrigeration, prepare the raspberry layer. Blend the Raspberries - Berries Paradise® domes with lemon juice, sugar, and water at high speed. Once the ingredients are combined, lower the blender speed, open the lid, pour in the melted gelatin, and finish integrating.
  • Take the mousse out of the refrigerator and carefully pour the raspberry mixture on top, passing it through a strainer beforehand. Once you cover the ring, refrigerate again until the layer solidifies.
  • Unmold the chocolate mousse with raspberry onto a flat plate, decorate with lemon zest and Raspberries - Berries Paradise® around the circumference, and finish with a few slices of lemon. You will love it!
