Cinnamon Mousse

Cinnamon mousse is a very delicious cold dessert; it has a smooth consistency just like its flavor, and the aroma will captivate everyone.

  • 500 grams cow's milk
  • 4 egg yolks
  • 90 grams sugar
  • lime zest
  • cinnamon sticks
  • 2 leaves unflavored gelatin powder
  • 300 grams sour cream

  • Heat the milk, cinnamon, and lemon zest over medium heat.
  • Whisk the egg yolks with the sugar until they become pale.
  • Quickly mix the two mixtures over low heat and do not stop stirring or let the preparation boil.
  • Soak the gelatin sheets in cold water, and when ready, add to the milk mixture.
  • Let the mixture cool and add the cream. Mix well and serve in individual dessert bowls or in a large baking dish.
  • Refrigerate the preparation until it sets and serve well chilled. It may take up to 4 hours.
