500 grams cow's milk
4 egg yolks
90 grams sugar
lime zest
cinnamon sticks
2 leaves unflavored gelatin powder
300 grams sour cream

Heat the milk, cinnamon, and lemon zest over medium heat.
Whisk the egg yolks with the sugar until they become pale.
Quickly mix the two mixtures over low heat and do not stop stirring or let the preparation boil.
Soak the gelatin sheets in cold water, and when ready, add to the milk mixture.
Let the mixture cool and add the cream. Mix well and serve in individual dessert bowls or in a large baking dish.
Refrigerate the preparation until it sets and serve well chilled. It may take up to 4 hours.
