Cinnamon mousse is a very rich cold dessert, has a smooth consistency as well as its flavor, the smell will conquer all.

Ingredients

4 portions
  • 500 grams milk
  • 4 egg yolks
  • 90 grams sugar
  • to taste lemon zest
  • cinnamon sticks
  • 2 leaves gelatin
  • 300 grams cream

Preparation

Put the milk, cinnamon and lemon zest over medium heat.
Beat the yolks with the sugar until it turns whitish.
Mix the two compositions quickly over low heat and do not stop moving or boiling the preparation.
Hydrate the grenetina leaves in cold water and when ready, add to the milk mixture.
Let the mixture cool and add the cream. Mix well and serve in individual bowls for dessert or in a large refractory.
Refrigerate the preparation until it sets and serve very cold. It may take up to 4 hours.

PRESENTATION

Sprinkle some cinnamon.
