Cold Lemon Mousse

  • 2/3 cups lime juice, natural
  • 2 tablespoons sugar
  • 2 teaspoons unflavored gelatin powder, unflavored
  • 2 drops food coloring, green (optional)
  • 1 can condensed milk
  • 1 cup whipping cream, more 2 tablespoons of sugar
  • 2 teaspoons unflavored gelatin powder, unflavored (10 grams)
  • 1 cup whipping cream

  • In a pot, combine the lemon juice and sugar. Add the powdered gelatin, let it soften for 1 minute. Heat over medium heat for 3 minutes until fully dissolved. Stir in the lemon zest and coloring (optional). Remove from heat and let cool slightly.
  • Add the condensed milk. Reserve.
  • Whip the heavy cream until fluffy. Fold it into the lemon and condensed milk mixture with gentle movements.
  • Pour the mousse into individual cups and refrigerate for a minimum of 1 hour. Serve.
