In a pot, combine the lemon juice and sugar. Add the powdered gelatin, let it soften for 1 minute. Heat over medium heat for 3 minutes until fully dissolved. Stir in the lemon zest and coloring (optional). Remove from heat and let cool slightly. Add the condensed milk. Reserve.
