Creamy Chocolate Mousse Cups with Avocado

  • Heat a small pot over medium heat with the coconut milk and remove when hot. Add the dark chocolate to melt and incorporate perfectly well. Let the mixture cool slightly. Set aside.
  • In the processor, add the avocado with the dates and vanilla extract, process until the mixture is smooth and creamy, pour the melted chocolate into the processor to mix completely. Serve the mixture in cups and refrigerate for 30 minutes.
  • Heat a small pot over medium heat, add the dates with the raspberry and flaxseed, mash the mixture until a thick sauce forms. Remove from heat, cool, and set aside.
  • Serve the topping on top of the creamy mixture, decorate with raspberries, and sprinkle flaxseed.
