Pumpkin and Walnut Mousse

  • 1 cup cow's milk, cold
  • 1 cup pumpkin purée
  • 2 packages vanilla pudding
  • 1 1/4 teaspoons pumpkin spice, or pumpkin pie spice
  • 2 cups whipped cream
  • 1 tablespoon margarine, melted
  • 1/2 cups pecans, chopped
  • 1/3 cups brown sugar

  • Pour the milk into a large bowl. Add the pumpkin, pudding mix, and pumpkin pie spice. Whisk the mixture for 2 minutes until smooth. (The mixture will thicken.) Immediately add the topping and stir. Using a spoon, fill 8 dessert cups.
  • Refrigerate the cups for 4 hours or until the contents set.
  • Mix the butter, pecans, and sugar well. Before serving the dessert, drizzle it with the nut mixture. Store any leftover dessert in the refrigerator.
