Pumpkin Mousse with Cookies

Delicious pumpkin mousse with a cookie crust. You will love this mousse recipe, as it feels like eating pie in a cup. A different dessert option, very easy to prepare and with a rich pumpkin flavor.

  • 1 package cookies, vanilla
  • 1/2 sticks butter, unsalted melted butter
  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 3/4 cups cream cheese, at room temperature (for the filling)
  • 1 3/4 cups pumpkin purée, (for the filling)
  • 1 teaspoon cinnamon, (for the filling)
  • 1 teaspoon ginger
  • 1/2 teaspoons pepper
  • 1/2 teaspoons nutmeg
  • 1 1/2 cups condensed milk
  • 2 cups chantilly cream

  • Place the vanilla cookies in a food processor and crush them until completely crumbled.
  • Mix the cookie crumbs with the melted butter and the two sugars.
  • Place the mixture in glasses or cups and refrigerate.
  • Add the pumpkin puree and spices to a mixing bowl.
  • Add the condensed milk and mix again.
  • Attach the whisk to the mixer and incorporate half of the whipped cream until the mixture is fluffy.
  • Refrigerate for 1 hour.
  • Place the mousse in a pastry bag and serve it in the glasses with the cookie base.
  • Decorate with more whipped cream on top and insert a cinnamon stick or a cookie.
