Delicious pumpkin mousse with a cookie crust. You will love this mousse recipe, as it feels like eating pie in a cup. A different dessert option, very easy to prepare and with a rich pumpkin flavor.

1 package cookies, vanilla
1/2 sticks butter, unsalted melted butter
2 tablespoons sugar
2 tablespoons brown sugar
3/4 cups cream cheese, at room temperature (for the filling)
1 3/4 cups pumpkin purée, (for the filling)
1 teaspoon cinnamon, (for the filling)
1 teaspoon ginger
1/2 teaspoons pepper
1/2 teaspoons nutmeg
1 1/2 cups condensed milk
2 cups chantilly cream

Place the vanilla cookies in a food processor and crush them until completely crumbled.
Mix the cookie crumbs with the melted butter and the two sugars.
Place the mixture in glasses or cups and refrigerate.
Add the pumpkin puree and spices to a mixing bowl.
Add the condensed milk and mix again.
Attach the whisk to the mixer and incorporate half of the whipped cream until the mixture is fluffy.
Refrigerate for 1 hour.
Place the mousse in a pastry bag and serve it in the glasses with the cookie base.
Decorate with more whipped cream on top and insert a cinnamon stick or a cookie.
