  • 2 cups ground biscuit, for the base
  • 1 tablespoon cinnamon, for the base
  • 1 1/2 pinches salt flower, for the base
  • 3/4 cups butter, melted, for the base
  • 2 cups whipping cream, for the mousse
  • 1/2 cups cream cheese
  • 3/4 cups icing sugar
  • 1 cup Smucker's® Raspberry Jam
  • 2 tablespoons unflavored gelatin powder, hydrated
  • Smucker's® Raspberry Jam, for decoration
  • raspberries, for decoration

  • In a bowl, mix the crushed cookie, cinnamon, fleur de sel, and butter until a pasty consistency is achieved. Set aside.
  • Whip the heavy cream, cream cheese, and powdered sugar until slightly firm. Add the Smucker’s® raspberry jam and mix in. Finally, add the melted gelatin and set aside.
  • Place the crushed cookie mixture in a pastry ring and spread it out. Pour the raspberry mousse over the cookie and refrigerate for 2 hours or until firm.
  • Remove the mousse from the mold, spread a thin layer of Smucker's® raspberry jam, and decorate with raspberries.
