2 cups juice, of pear
1 1/4 cups sugar
1 tablespoon cardamom
1 fresh ginger
1 cinnamon stick
5 pears
200 grams white chocolate, (for the white chocolate mousse)
1/3 cups liqueur, of pear (for the white chocolate mousse)
1/4 cups water, (for the white chocolate mousse)
1 tablespoon vanilla essence, (for the white chocolate mousse)
4 cups mascarpone cheese, (for the white chocolate mousse)
2 cups chantilly cream, (for the white chocolate mousse)
225 grams ladyfingers, (for decoration)
2 cups chantilly cream, (for decoration)
1 tablespoon icing sugar, (for decoration)
1 stick white chocolate, (for decoration)

Place the white wine, pear juice, sugar, cardamom, ginger, and cinnamon in a pot. Bring to a boil for 5 minutes until the sugar has dissolved.
Peel the pears and add them to the pot. Let it boil for 35 minutes until the pears are soft but still hold their shape.
Transfer the pears along with the liquid to a bowl and let cool. Cover the bowl and refrigerate for 3 hours.
Remove the pears from the syrup and set them aside. Place the pear syrup in a pot and let it reduce for 10 minutes.
Strain the syrup through a sieve and remove the cinnamon stick, divide the syrup into two equal parts and set aside.
For the mousse: Finely chop the white chocolate and mix it with the pear liqueur and water.
Place the bowl over a water bath and mix until you achieve a smooth consistency and the chocolate has completely melted.
Add the vanilla essence and mix.
Let the mixture cool and add the mascarpone cheese. Whip until everything is well incorporated. Add the whipped cream and mix gently.
Cut the pears into thick slices.
Place the ladyfingers at the bottom of the serving plate. Spread a bit of the pear syrup and top with 1/3 of the white chocolate mousse.
Arrange the pear slices on top and repeat this process two more times.
Spread whipped cream on top. Use a peeler and shave the corners of the chocolate bar to create strips of white chocolate and scatter them on top.
Add a bit of powdered sugar on top to finish the decoration.
