Heat the water over low heat, add the cinnamon, star anise, and piloncillo, boil, and turn off.
Add the ground coffee, cover, and let it steep for 10 minutes.
Beat the mascarpone cheese with sugar and vanilla extract. Set aside.
Dip the ladyfingers in the coffee and place them in a baking dish to form a layer; using a spoon, add the cheese, and repeat the process until the dish is full, sprinkle with cocoa powder.
Refrigerate for 2 hours before cutting, enjoy with a glass of milk.
