Colorful Cupcakes

  • 1 cup low-fat milk
  • 2 eggs
  • 1/2 cups oil
  • 1 teaspoon vanilla essence
  • 2 teaspoons baking powder
  • 1 cup artificial sweetener
  • 2 1/4 cups flour
  • 1 package reduced-fat cream cheese
  • 1 package artificial sweetener, to taste
  • food coloring, desired colors

  • Preheat the oven to a medium temperature before starting.
  • Place the eggs in a bowl and the sugar substitute. Beat these ingredients until frothy.
  • Add the vanilla extract, oil, and then the milk to the mixture and beat.
  • With circular motions and in a folding manner, add the flour and baking powder.
  • Separate the mixture into different bowls and add a drop of edible artificial coloring to each bowl, creating many colors.
  • Pour the mixture into cupcake molds with the respective paper for each and apply butter to prevent sticking.
  • Bake in the oven for 30 minutes.
  • To prepare the cream: beat the cream cheese and add the sugar substitute to taste.
  • Add the cream on top of the cupcakes.
