Cookie Cups Filled with Vanilla Cream

A fun way to enjoy dessert is with these crispy orange-flavored cookie cups filled with vanilla cream made from milk. They are delicious and original and are accompanied by red fruits.

  • 2/3 cups butter, (125 g) for the dough
  • 1/2 cups sugar, for the dough
  • 1 egg, for the dough
  • 1 teaspoon vanilla essence, for the dough
  • 1 tablespoon orange zest, for the dough
  • 1 2/3 cups flour, for the dough
  • 1/2 teaspoons salt, for the dough
  • 2 eggs, for the cream
  • 2 tablespoons cornstarch, for the cream
  • 2 tablespoons sugar, for the cream
  • 3 Santa Clara® vanilla flavoured milk, (200 ml each) for the cream
  • 1 cup mixed berries, for decoration
  • peppermint, for decoration

  • Preheat the oven to 180°C.
  • Cream the butter with the sugar. Add the egg, vanilla, and orange zest.
  • Add the flour and salt and beat until completely integrated. Refrigerate the dough for about 30 minutes.
  • Line a greased cupcake pan with the cookie dough to form cups. Place a small piece of aluminum and beans to add weight. Bake for about 15 to 20 minutes.
  • For the cream, in a bowl combine the eggs with the cornstarch and sugar. Set aside.
  • Heat in a small pot the Lechita Santa Clara® vanilla ice cream flavor, making sure it does not boil. Add a little of the hot milk to the egg mixture and return the preparation to the pot. Whisk vigorously and cook for about 5 to 10 minutes or until it thickens, then cool.
  • Fill the cookie cups with the vanilla cream and decorate with red fruits and mint.
