Cookies and Cream Ice Cream Cupcakes

  • 1 cup chocolate cookies, without filling
  • 1/4 cups butter, melted
  • 1 Cookies & Cream Halo Top®
  • 1 cup cream cheese
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla essence
  • 1/4 cups icing sugar
  • 2 tablespoons cookies, powdered

  • Process the cookies for 5 minutes until you get a fine powder, mix with the butter.
  • On a baking sheet lined with parchment paper, place rings, add the cookies with butter, pressing to compact. Refrigerate.
  • Meanwhile, beat the cream cheese with Greek yogurt, vanilla extract, and powdered sugar until creamy, place in a piping bag with a star tip. Set aside.
  • Using an ice cream scoop, add Cookies & Cream Halo Top® ice cream, press down a bit, until you have a smooth surface, freeze for 30 minutes.
  • Unmold and decorate with the yogurt frosting and a bit of cookie crumbs.
