Corn and Oat Cake

  • 6 ears corn, shucked
  • 6 eggs
  • 3/4 cups sugar
  • 1 1/2 sticks unsalted butter , melted
  • 1 3/4 cups oats
  • 1 teaspoon baking powder

  • Blend the corn kernels, eggs, and sugar.
  • Pour the blended mixture into a bowl and add the melted butter, oats, and baking powder until well combined.
  • Grease a mold or a covered pot, and place the mixture inside.
  • Bake for 30 minutes or until you insert a toothpick and it comes out clean.
