Corn Cake on the Skillet

With this easy no-bake recipe, you can prepare a delicious corn cake using the traditional Mexican formula. The best part is that you will need few ingredients and little time to make it, treat your family to this delicious corn cake!

  • 3/4 cups butter, melted
  • 6 ears corn, de-seeded
  • 1 tablespoon vanilla essence
  • 6 eggs
  • 1 can condensed milk
  • 1 cup cream cheese, cut into cubes
  • 2 cups flour, sifted
  • 1 teaspoon baking powder
  • strawberries, slices cut into quarters, for decoration
  • raspberries, for decoration
  • blueberries, for decoration
  • icing sugar, for decoration

  • Blend the melted butter, corn, vanilla extract, egg, sweetened condensed milk, and cream cheese. Set aside.
  • In a bowl, mix the previous preparation with a whisk, add sifted flour and baking powder, and beat until incorporated and you have a homogeneous mixture. Set aside.
  • Grease the Vasconia® deep skillet with butter and flour.
  • Pour the mixture into the Vasconia® deep skillet, cover, and cook on a griddle over low heat for 45 minutes. Let cool and set aside.
  • Unmold the corn cake onto a board and decorate with red fruits and powdered sugar.
