  • 1 cup corn masa flour
  • 1/3 cups butter
  • 1 egg
  • 1 egg yolk
  • 1 teaspoon sugar
  • 1 tablespoon water
  • 1 pinch salt
  • 1/2 cups corn masa flour, yellow
  • 1/2 kilos cream cheese
  • 1 cup sour cream
  • 3 tablespoons butter
  • 1 cup sugar
  • 6 eggs
  • 1 teaspoon lime zest
  • 1 teaspoon orange zest
  • 1/4 teaspoons almond essence

  • For the Crust Cut the butter into the flour along with the salt and sugar, mix until you have a crumbly dough.
  • Then, add the yolk and the egg and stir; add water if it is too dry, the dough you are preparing should not be kneaded, just incorporate the ingredients.
  • When the dough is ready, spread it out to cover the mold you prepared for baking and set aside.
  • For the Filling Beat the cheese until smooth along with the butter and add the rest of the ingredients, including the egg yolks, alternating them with the cornmeal until perfectly combined.
  • Next, beat the egg whites until stiff peaks form and gently fold them into the previous mixture.
  • Finally, once you have integrated the ingredients, pour into the mold and bake at 180° Celsius for 45 minutes.
