  • Preheat the oven to 170°C.
  • In a mixer, add the eggs with the sugar, beat until doubled in size, then add the lemon zest and vanilla extract.
  • With the help of a sieve, gradually add the flour and fold it in gently. Pour into two previously greased and floured cake pans and bake for 25 minutes, let cool and set aside.
  • For the frosting, whip the cream and add the powdered sugar, dividing it into four portions. Add a drop of blue, pink, violet, and melon food coloring respectively. Refrigerate and set aside.
  • Cut the cakes in half, and fill with frosting, alternating the colors.
  • Cover the cake with the remaining frosting, alternating the colors, and run a spatula around to even out and blend the colors.
  • For the glaze, heat the cream and add the white chocolate. Add a few drops of pink food coloring and mix until well combined.
  • Decorate the cake with the frosting, letting some drops fall over the edge to create the “dripped cake” effect. Finish with the cotton candy.
