Cotton Candy Cake

  • 2 cups sugar
  • 2 teaspoons vanilla essence
  • 2 limes, zest
  • 2 cups flour

  • Preheat oven to 338 ºF.
  • In a mixer, combine eggs and sugar and mix until the mixture doubles in volume. Add lime zest and vanilla essence. Mix thoroughly.
  • Sift flour into previous mixture. Mix in a folding motion. Pour cake batter into two greased and floured pans. Bake for 25 minutes and let cool. Set aside.
  • For the frosting: In a bowl, combine whipping cream and icing sugar and mix until perfectly incorporated. Divide frosting into 4 bowls. Add one drop of pink food coloring to the first bowl, one drop of blue food coloring to the second bowl, one drop of purple food coloring to the third bowl, and one drop of orange food coloring to the fourth bowl. Refrigerate and set aside.
  • Cut sponge cakes in half horizontally. Spread orange frosting on top of the first layer of sponge place. Place a second layer of sponge cake and repeat with blue frosting. Place a third layer of sponge cake and repeat with pink frosting. Place a fourth layer of sponge cake and repeat with purple frosting.
  • Cover the cake with frosting. Using a scraper, level out frosting and blend colors.
  • For the ganache: In a bowl, heat whipping cream and add white chocolate. Add a few drops of pink food coloring and mix thoroughly.
  • Pour ganache over cotton candy cake edges to create a drip cake effect. Garnish with cotton candy for the final touch.
