Addictive Berry Cupcakes

This is a must-have recipe! Delicious berry cupcakes ideal for Valentine's Day, Christmas, or any occasion! They require quite a few ingredients and time, but they are worth it! If you follow the steps carefully, they will be deli-addictive.

  • 250 grams flour, sifted
  • 1 envelope dry yeast
  • 1/2 teaspoons baking soda
  • 100 grams sugar
  • 80 grams butter, melted, clarified
  • 200 grams plain yogurt
  • 200 grams mixed berries, frozen (for the filling)
  • 100 grams whipping cream, Lyncott (for the filling)
  • 3 tablespoons icing sugar, (for the filling)

  • Preheat the oven to 180º. Grease and flour the cupcake molds. Mix the sifted flour with the baking powder and baking soda.
  • Beat the egg with the sugar, butter, and yogurt. Beat vigorously. Then gradually add the flour mixture. Mix well until the dry ingredients are moist, being careful not to overmix as the cupcakes may turn out dry.
  • Mix the whipping cream with the powdered sugar and berries.
  • Put a tablespoon of the mixture in the cupcake molds, then add a little of the filling and cover with more mixture until 3/4 full.
  • Place in the oven and bake for approximately 15 to 20 minutes or until they are golden brown on top and a toothpick inserted comes out clean; baking time varies from oven to oven. Once cooked, take them out of the oven and let cool.
