Banana and Blueberry Cupcakes

This recipe is rich in antioxidants and flavor, highly recommended as it doesn't contain many calories!

  • 2 bananas, medium mashed

  • Preheat the oven to 180º, grease and flour the cupcake molds. Make small balls the size of a marble with cream cheese and refrigerate until needed.
  • Mix the mashed bananas, egg, and butter in a large bowl. In a separate bowl, mix the baking powder and flour. Gradually add to the previous mixture; it may remain lumpy or textured due to the bananas. Finally, add the tablespoons of milk and mix.
  • Carefully add the blueberries to the mixture. Pour a tablespoon of the mixture into the molds, place a ball of cream cheese in the center, and fill the cupcake molds with the mixture up to 3/4 of their capacity, then put them in the oven.
  • Bake for approximately 15 minutes until the cupcakes take on a golden color; once cooked, remove from the oven and let cool.
