In a bowl, beat the sugar, oil, and vanilla together with an electric mixer, adding the eggs one at a time.
In another bowl, sift together the flour, cinnamon, baking soda, and salt.
With the electric mixer on low speed, add half of the dry ingredients to the wet mixture and then the other half.
Add the grated carrot, raisins, and walnuts to the previous mixture. Mix well, then pour the mixture into the cupcake mold.
Bake for 35 minutes or until a toothpick comes out clean. Let cool before adding the frosting.
FROSTING: In a bowl, add the cream cheese, butter, and vanilla. Once well mixed, add the powdered sugar and beat until creamy, then spread the frosting on the cupcakes when they are cool.
