Carrot Cupcakes with Raisins

Traditional and delicious carrot cupcakes. They are moist, fluffy, and have an excellent flavor. You can make them for any occasion or simply enjoy them one afternoon at home; you can also decorate them with some delicious cream cheese frosting or eat them plain.

  • 1 cup flour
  • 2 cups sugar
  • 3 cups carrot, finely grated
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon powder
  • 1 cup vegetable oil
  • 4 eggs

  • Preheat the oven to 180 ºC.
  • Mix all the ingredients in a bowl until they are perfectly blended and form a consistent batter.
  • Fill the cupcake molds halfway or two-thirds full at most.
  • Bake for 20 to 25 minutes and insert a toothpick, making sure it comes out completely clean.
  • Cool for 10 minutes before eating.
