Cinnamon Cupcakes with Vanilla Frosting

These cupcakes are very original and have all the flavor of a cinnamon roll. They are delicious to accompany a coffee.

  • 2/3 cups butter
  • 2 eggs
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 3/4 cups brown sugar
  • 1/3 cups walnuts, finely chopped
  • 2 teaspoons cinnamon powder
  • 1 3/4 cups sugar
  • 1 1/2 teaspoons vanilla essence
  • 1 1/4 cups cow's milk
  • 1 1/2 cups icing sugar, (frosting)
  • 2 1/2 teaspoons cow's milk, (frosting)
  • 1 teaspoon vanilla essence, (frosting)
  • 1 teaspoon unsalted butter, melted (frosting)

  • Prepare your cupcake molds with liners or butter so they don't stick. Stores sell liners with many decorations; you can choose the one you like best.
  • Mix in a bowl the flour, baking powder, and salt. In a separate bowl, mix the brown sugar, nuts, and cinnamon. Reserve each bowl.
  • Preheat the oven to 180 °C. With the help of a mixer, beat the butter at medium-high speed (for half a minute), reduce the speed to medium, and gradually add the granulated sugar until well combined. Remember to scrape down what sticks to the mixing bowl.
  • Once it has a smooth consistency and has puffed up a bit, add the eggs one at a time. Add the vanilla. Lower the speed and gradually add the reserved flour and the milk.
  • Once you have the batter, pour some into the cupcake liners. Sprinkle a bit of the reserved sugar with nuts. Repeat the process.
  • Bake for approximately 18 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool before adding the frosting.
  • For the frosting: in a small bowl, add the sifted powdered sugar. Add the milk, vanilla, and melted butter. Beat until you achieve a creamy and shiny consistency. Place this frosting in a bag, cut a small piece of the corner, and drizzle over the cupcakes. Let them rest for 10 minutes and serve.
