Apple Cupcakes with Cajeta Frosting

  • 1/4 cups Santa Clara® apple yogurt
  • 2 cups flour
  • 1/4 teaspoons salt
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon powder
  • 1 cup sugar
  • 1/2 cups vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 cup apple purée
  • 1/2 cups cajeta
  • 90 grams butter
  • 3 cups icing sugar
  • 1/4 teaspoons salt
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180°C.
  • Mix the flour, salt, baking powder, and cinnamon. In the mixer, combine vegetable oil, sugar, and eggs.
  • Add the vanilla, apple puree, and Santa Clara® Apple Yogurt. Gradually incorporate the dry ingredients into the apple mixture.
  • Place cupcake liners in a cupcake mold and pour the batter into each one. Bake at 180°C for 20 minutes or until a toothpick inserted comes out clean.
  • Remove the cupcakes from the oven and let them cool completely.
  • For the frosting, beat the butter together with the cajeta, gradually add the powdered sugar. Add the salt and vanilla.
  • Decorate the cupcakes with the frosting.
