If you really enjoy the traditional dessert crème brûlée, you're going to love this recipe. The custard is served inside a delicious cupcake. If you have guests, this dessert is perfect to impress them.
In a medium pan, heat the milk, heavy cream, 6 tablespoons of sugar, salt, and vanilla. Do not let this mixture come to a boil.
In a bowl, whisk the egg yolks and two tablespoons of sugar. Once the mixture changes color, add the cornstarch.
Take ½ cup of the mixture you heated in a pan and gradually add it (one tablespoon at a time) to the egg yolk mixture, whisking vigorously.
Lower the heat of the pan, and gradually add the egg yolk mixture to the pan. Cook until the preparation thickens (about 30 seconds).
Immediately strain this preparation. Add one tablespoon of butter. Place plastic wrap over the surface of the mixture and refrigerate for two hours.
Using a cookie cutter, cut a circle on top of the cupcakes, aiming for a depth of 3 cm and a diameter of 4 cm (approximately, as it depends on the size of the cupcake).
Pour the custard inside the cupcakes. Sprinkle sugar on top and use a torch to caramelize the sugar until a crust forms.
