  • In a medium pan, heat the milk, heavy cream, 6 tablespoons of sugar, salt, and vanilla. Do not let this mixture come to a boil.
  • In a bowl, whisk the egg yolks and two tablespoons of sugar. Once the mixture changes color, add the cornstarch.
  • Take ½ cup of the mixture you heated in a pan and gradually add it (one tablespoon at a time) to the egg yolk mixture, whisking vigorously.
  • Lower the heat of the pan, and gradually add the egg yolk mixture to the pan. Cook until the preparation thickens (about 30 seconds).
  • Immediately strain this preparation. Add one tablespoon of butter. Place plastic wrap over the surface of the mixture and refrigerate for two hours.
  • Using a cookie cutter, cut a circle on top of the cupcakes, aiming for a depth of 3 cm and a diameter of 4 cm (approximately, as it depends on the size of the cupcake).
  • Pour the custard inside the cupcakes. Sprinkle sugar on top and use a torch to caramelize the sugar until a crust forms.
