Cupcakes with Lemon Frosting

  • 150 grams unsalted butter

  • 200 grams sugar
  • 2 eggs
  • 250 grams flour
  • 50 milliliters cow's milk
  • 1 teaspoon baking powder
  • 250 grams icing sugar
  • 2 tablespoons lime juice
  • 1/2 teaspoons food coloring, yellow

  • Preheat the oven to 180°C.
  • In a bowl, beat the 150 g of butter together with the 200 g of sugar and the zest of half a lemon. You should achieve a light and fluffy texture. Without stopping to beat, add the eggs one by one, beating well before adding the next egg.
  • Add the 50 ml of milk, beat until everything is well combined.
  • In another bowl, sift the 250 g of flour, the teaspoon of baking powder, and slowly incorporate it into the mixture. Stir until you achieve a homogeneous batter.
  • Divide the batter into the molds and bake at 180°C for 15 to 20 minutes, or until the batter rises and is firm. Remove the cupcakes from the oven and let them cool completely.
  • For the frosting: Place a pot over low heat and add the two tablespoons of lemon juice, you can use lemon extract if you prefer. Add the 250 g of butter and stir until melted. Add the 250 g of powdered sugar and remove the pot from the heat.
  • Add the yellow food coloring and stir until the entire frosting is colored. Let the frosting cool and thicken enough to decorate the cupcakes.
  • Place the frosting in a piping bag and decorate the cupcakes.
