I made these cupcakes for a friend's son's birthday. They are much easier to make than they appear, and kids love them. You can also find the recipe to make Elmo and Abelardo (Big Bird). Prepare this delicious recipe; they will love it.
To start, make the cupcakes according to the instructions on the box you bought. Remember to fill only 2/3 of the cupcake mold so they don't overflow.
Before putting the frosting on the cupcakes, prepare all your pieces. To make the eyes, roll out the fondant with a rolling pin (it's very easy to use) and with the tips of your piping bag, cut out 24 white circles and 24 smaller black circles. Place the black circles on top of the white ones with a bit of frosting, making them slightly off-center since it's a bit crooked.
Cut the chocolate chip cookies in half.
Prepare the frosting by mixing the vanilla frosting with blue food coloring. Refrigerate for at least 15 minutes before using so that the shapes from the piping bag tip work well.
Place the frosting in the piping bag and using the star tip, cover a cupcake, add two eyes and half a cookie, and you're done!
