Mantecadas shaped like cempasúchil

  • 5 eggs, for the mantecadas
  • 1 cup sugar, for the mantecadas
  • 1 cup vegetable oil, for the mantecadas
  • 1/2 cups orange juice, for the mantecadas
  • 1 tablespoon REXAL® baking powder, for the mantecadas
  • 2 cups flour, sifted, for the mantecadas
  • 1 tablespoon orange zest, for the mantecadas
  • butter frosting
  • orange food coloring, in spray

  • In a bowl, mix REXAL® baking powder, flour, and orange zest until well combined. Set aside.
  • Use an electric mixer to beat the eggs with the sugar until the mixture doubles in size and takes on a pale color. While continuing to mix, gradually add the oil. Then pour in the orange juice and continue mixing until well incorporated. Add the dry ingredient mixture and beat until you obtain a thick mixture.Place cupcake liners in a muffin tin, pour in the mixture, and bake at 200 °C for 25 minutes.
  • Decorate the mantecadas with icing and spray coloring.
