Marbled Monster Cupcakes

  • 1 cup mayonnaise with lemon juice McCormick®
  • 1/4 cups sugar
  • 1 cup milk
  • 1 tablespoon lime zest
  • 2 tablespoons vanilla essence
  • 2 cups flour
  • 1 1/2 tablespoons baking powder
  • 1/2 tablespoons baking soda
  • 1 pinch salt
  • 1/4 cups cocoa, for the marbling
  • 4 tablespoons milk, for the marbling
  • cheese bitumen, of colors, for decoration
  • fondant eyes, for decoration

  • Use a whisk to mix the Mayonnaise with McCormick® lime juice, sugar, milk, lemon zest, and vanilla essence until a homogeneous batter is obtained. Add flour, baking powder, baking soda, and salt, and mix. Divide the batter into two portions and set aside.
  • In a bowl, mix cocoa and milk, then incorporate it into a portion of the cupcake batter and mix.Pour the mixture alternately into the cupcake molds; that is, place a bit of chocolate batter and then a bit of vanilla mixture until each mold is filled to ¾ of its capacity.Bake for 20 minutes at 180 °C or until well cooked.
  • Decorate the Halloween cupcakes with cream cheese frosting and embellish with fondant eyes.
