Passion Fruit Cupcake

I'm sharing this passion fruit cupcake recipe with you. It's an easy and delicious recipe that you can make in no time. The passion fruit pulp gives a special touch to this simple cupcake recipe. You can add a bit of the passion fruit pulp on top for extra flavor.

  • 100 grams butter, room temperature
  • 100 grams sugar
  • 2 tablespoons cow's milk
  • 100 grams passion fruit
  • 145 grams flour, sifted
  • 15 grams shredded coconut
  • 2 eggs
  • 1/2 teaspoons baking powder
  • 60 grams butter, room temperature
  • 100 grams icing sugar
  • 120 grams cream cheese
  • 100 grams passion fruit pulp, for the frosting

  • Preheat the oven to 180°C.
  • Beat the butter with the sugar until well combined; it should have a creamy consistency.
  • Add the eggs one at a time, making sure to mix well between each addition. Add the passion fruit pulp and shredded coconut. You can strain the passion fruit pulp to remove the seeds.
  • Add the flour in three batches, until it is fully integrated. If the batter is too thick, add milk by tablespoons, starting with one and stirring, until you have a creamy batter.
  • Place cupcake liners in a cupcake pan and fill them 3/4 of the way with the cupcake mixture. Bake at 180°C for 20 minutes or until a toothpick inserted comes out clean.
  • Remove the cupcakes from the oven and carefully transfer them to a wire rack to cool completely.
  • For the frosting, place the cream cheese in a bowl and beat until creamy. Add the butter, which I recommend to be at room temperature for easier integration. Then, gradually add the sifted powdered sugar and finally the passion fruit pulp. Beat until you have a creamy consistency.
  • Fill a piping bag with a large star tip with the frosting. Once the cupcakes are cool, decorate them with the frosting.
