Beat the butter with the sugar until well combined; it should have a creamy consistency.
Add the eggs one at a time, making sure to mix well between each addition. Add the passion fruit pulp and shredded coconut. You can strain the passion fruit pulp to remove the seeds.
Add the flour in three batches, until it is fully integrated. If the batter is too thick, add milk by tablespoons, starting with one and stirring, until you have a creamy batter.
Place cupcake liners in a cupcake pan and fill them 3/4 of the way with the cupcake mixture. Bake at 180°C for 20 minutes or until a toothpick inserted comes out clean.
