The Pineapple Flower is an edible decoration for the cupcakes. It is a different and fun way to present your desserts, and the flavor of the dehydrated pineapple is delicious.
Cut the ends off the pineapple and remove the skin.
With a parisien, remove the dimples from the pineapple.
Cut very thin slices of pineapple and place them on a silicone mat.
Bake the pineapple at 100° C for 60 minutes or until dehydrated. Remove them from the mat and place them in a cupcake mold, so they take the shape of a flower.
Bake the pineapples again at 100° C for 30 minutes or until they are translucent. Be careful not to burn them.
Place a dollop of whipped cream on top of the cupcakes. Mount the pineapple flower on top of these.
