Manteroll

You probably already know the recipe for cinnamon rolls, but this version in cupcake form will be a new and fun way to prepare them. The perfect mix of sweet bread, its classic flavor will delight you. Additionally, these cupcakes have blueberries instead of raisins, so there will be no excuse for anyone not to enjoy a bite of these customized cinnamon roll cupcakes.

  • 4 cups flour, for the dough
  • 1/4 teaspoons salt, for the dough
  • 3/4 cups sugar, for the dough
  • 10 grams yeast, for the dough
  • 2 eggs, for the dough
  • 1/2 cups cow's milk, warm, for the dough
  • 1 cup butter, fried and diced, for the dough
  • 1/4 cups butter, melted, for the filling
  • sugar, for the filling
  • cinnamon powder, for the filling
  • 1 cup cranberries, for the filling
  • 1 cup pecans, finely chopped, for the filling
  • 1/2 cups egg, for brushing (filling)
  • 1 cup icing sugar, for the glaze
  • 3 tablespoons cow's milk, for the glaze

  • Preheat the oven to 170 °C.
  • For the dough: in a mixer, add the flour, salt, sugar, yeast, and egg, and beat until you have a well-integrated dough.
  • Add the butter and knead until smooth and elastic. Place in a greased bowl and cover with non-stick plastic. Let rise for 1 hour, or until it doubles in size.
  • On a floured surface, roll out the dough to a thickness of 5 mm. Brush with butter, sprinkle with sugar and cinnamon, add the blueberries and walnuts, and roll up.
  • Cut pieces 3 cm wide and place them in a cupcake mold with liners, brush with egg, and let rise for 20 minutes.
  • Bake for 18 minutes. Let cool and set aside.
  • For the glaze: mix the powdered sugar with the milk until you achieve a semi-thick consistency.
  • Using a piping bag, decorate the manteroles with the glaze.
  • Enjoy them with a coffee.
