These Neapolitan cupcakes have the combination of three of our favorite flavors: vanilla, chocolate, and strawberry. Fluffy cupcakes with three flavors and the best, creamiest strawberry frosting. Give them a try!
In a mixer, beat the butter until creamy, add the sugar, and gradually add the San Juan® Eggs.
Add the flour and baking powder, pour in the milk, the vanilla essence, and beat until combined. Divide the mixture into two bowls.
To one mixture, add the melted chocolate and mix until integrated.
Pour the chocolate mixture into the cupcake liners until 1/3 full. Add the vanilla mixture until filling ¾ of the liner, bake for 15 minutes. Let cool.
For the frosting, beat the cream cheese with the butter until smooth, add the strawberry essence, powdered sugar, and pink food coloring.
Place the frosting in a piping bag and decorate the cupcakes.
