Preheat the oven to 180 degrees Celsius, prepare the 12-cupcake tray by placing a cupcake liner in each cavity.
Sift the flour, baking powder, and salt in a medium bowl.
Cream the butter, eggs, sugar, vanilla, and lemon zest for 2 minutes on medium speed.
Continue beating on low speed and gradually add the flour mixture alternating with the milk. Beat for 2 more minutes.
Pour the mixture into the 12-cupcake tray, filling only 2/3 of its capacity, and bake for 18 to 20 minutes or until a toothpick inserted comes out clean.
Remove from the oven and let cool completely on a wire rack.
