Vanilla Cupcakes with Egg White Frosting

  • 2 cups pancake mix
  • 2 cups wheat flour
  • 1 1/2 teaspoons baking powder
  • 200 grams unsalted butter
  • 2 cups sugar
  • 4 eggs, separated
  • 1 cup cow's milk
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180°C.
  • Sift the flours and baking powder and combine them.
  • Mix the butter at medium speed until creamy, gradually add the sugar and continue beating, adding the yolks one at a time.
  • Add the ingredients gradually alternating with the milk and vanilla until well incorporated without overmixing.
  • Mix with the egg whites that will be beaten to a meringue consistency in a folding manner.
  • Fill the cupcake liners 2/3 full and bake for approximately 25 minutes.
