Cupcakes

This is a delicious and easy recipe to prepare cupcakes, also known as magdalenas. Fluffy and perfect for decorating as you like. You can make them to treat everyone at home, to give as gifts, or for any of your events.

  • 1/2 cups unsalted butter , at room temperature (preferably salted)
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour , sifted
  • 2 1/2 teaspoons baking powder , (Royal)
  • 2 tablespoons vanilla essence
  • 1/2 cups cow's milk , or evaporated milk

  • In a bowl, add ½ cup of butter at room temperature, and add 1 cup of sugar, mixing well without leaving any lumps.
  • Once the sugar and butter are well combined, we will add 1 egg, mix it well to incorporate, and then add the other one, continuing to mix. Once mixed, we add the 2 teaspoons of vanilla and keep mixing.
  • Now we will mix the dry ingredients; to the 1½ cups of flour, we will add the baking powder, then add half of the flour with the powder to the butter mixture and mix well until incorporated. Then add the milk and continue mixing, and finally add the rest of the flour. We should not overbeat because they won't rise; mix to an intermediate point.
  • Preheat the oven to 180ºC, place cupcake liners in a twelve-cup muffin tray, and using a ladle or an ice cream scoop, fill the liners (paper cups) to ¾ full. Bake in the oven for 25 minutes, or until a tester or knife inserted into a cupcake comes out clean; when it comes out clean, it's time to take them out of the oven.
