Easter Cupcakes

  • 4 1/2 cups flour
  • 3/4 teaspoons baking soda
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 cup unsalted butter, at room temperature
  • 2 1/4 cups sugar
  • 5 eggs, at room temperature
  • 2 cups whole milk, with some drops of lime juice
  • 2 teaspoons vanilla essence
  • 5 egg whites, for the frosting
  • 1 cup sugar, for the frosting
  • 1 pinch salt, for the frosting
  • 1/2 sticks butter, 1.1 pounds, divided into tablespoons, at room temperature, for the frosting
  • 1 1/2 teaspoons vanilla essence, for the frosting
  • green food coloring, for the frosting

  • Preheat the oven to 356 °F. Place cupcake liners in a cupcake pan.
  • In a bowl, mix flour, baking powder, baking soda, and salt.
  • Using a mixer on medium-high speed, cream butter and sugar until white and fluffy. Lower speed and add eggs one by one mixing thoroughly after adding each one. Add egg yolks and mix thoroughly.
  • Lower speed and add the dry ingredients in three parts alternating with milk. Mix thoroughly and add vanilla essence.
  • Fill each cupcake liner with batter until ¾ full.
  • Bake for about 20 minutes until cooked through. Let cool on a rack for 10 minutes.
  • For the green frosting: In a small pot, mix egg whites, sugar, and salt and place in a water bath with boiling water. Mix with a whisk until sugar dissolves completely. Transfer previous mixture to a mixer with a whisk attachment. Mix on medium-high speed to stiff peaks. Keep mixing for 10 minutes until cold.
  • Add butter little by little and mix on medium-low speed mixing thoroughly after each portion. Mix for about 2 minutes until there are no air bubbles left. Add drops of green food coloring until the desired color is obtained.
  • Place green frosting in a piping bag with a grass tip 233. Pipe green frosting grass starting at the center of the cupcakes by squeezing a bit of frosting, letting go, and pulling up. For more realistic grass, pipe the green frosting at different lengths.
  • Garnish Easter cupcakes with mini eggs or chocolate eggs.
