Cupcakes with Grass and Easter Eggs

These delicious vanilla cupcakes are topped with a grass-shaped meringue frosting with some candy eggs on top. You can prepare them with other candies like gummy worms. They are perfect for a children's party. Make these cupcakes with grass and Easter eggs.

  • 4 1/2 cups flour
  • 3/4 teaspoons baking soda
  • 2 1/4 teaspoons baking powder, royal
  • 1 1/2 teaspoons salt
  • 1 cup unsalted butter, at room temperature
  • 2 1/4 cups sugar
  • 5 eggs, at room temperature
  • 2 cups whole milk, with a few drops of lemon
  • 2 teaspoons vanilla essence
  • 5 egg whites, (for the frosting)
  • 1 cup sugar, (for the frosting)
  • 1 pinch salt, (for the frosting)
  • 1/2 sticks butter, 1/2 kilo cut into tablespoons, at room temperature (for the frosting)
  • 1 1/2 teaspoons vanilla essence, (for the frosting)
  • green food coloring, (for the frosting)

  • Preheat the oven to 350 F (180 degrees). Place the cupcake liners in the muffin tin.
  • Mix the flour with the baking powder, baking soda, and salt.
  • With an electric mixer on medium-high speed, cream the butter and sugar until pale and fluffy. Reduce the speed to medium and add the eggs, one at a time, beating well after each addition. Add the yolks and stir well until everything is incorporated.
  • Reduce the speed and add the flour in three parts, alternating with the milk. Stir well and add the vanilla extract.
  • Divide the batter among the cupcake molds and fill them 3/4 full.
  • Cook until done, about 20 minutes. Transfer to a wire rack to cool for 10 minutes.
  • Prepare the meringue frosting: Mix the egg whites, sugar, and salt in a small pot and place it over another pot with boiling water. Whisk with a balloon whisk until the sugar dissolves completely. Transfer the mixture to a mixer with the balloon whisk attachment. Beat on medium-high speed until peaks form. Continue beating until it cools for about 10 more minutes.
  • With the mixer on medium-low speed, gradually add the butter, stirring well after each addition. Continue beating (now with the regular attachment) until there are no air bubbles, about 2 minutes. Add the drops of green food coloring to the mixer (be careful, it colors a lot) until you achieve the desired color.
  • Put the green frosting in a piping bag with a small tip with many openings (#233). Start in the center of the cupcakes and moving upward, create the grass on top of the cupcake. Make some a little larger to make it look like real grass.
  • Decorate the cupcakes with sugar or chocolate Easter eggs.
