Cupcakes with Grass and Easter Eggs

These rich vanilla cupcakes have a merengue bitumen in the form of grass with some sweet eggs on top. You can prepare them with other sweets like gummies in the shape of little worms. They are ideal for a children's party. Prepare these cupcakes with grass and Easter eggs.

Ingredients

36 portions
  • 4 1/2 cups flour
  • 3/4 teaspoons baking soda
  • 2 1/4 teaspoons baking soda, royal
  • 1 1/2 teaspoons salt
  • 1 cup unsalted butter, at room temperature
  • 2 1/4 cups sugar
  • 5 eggs, at room temperature
  • 2 cups whole milk, with a few drops of lemon
  • 2 teaspoons vanilla extract
  • 5 egg whites, (for bitumen)
  • 1 cup sugar, (for bitumen)
  • 1 pinch salt, (for bitumen)
  • 1/2 sticks butter, 1/2 kilo cut in tablespoons, at room temperature (for bitumen)
  • 1 1/2 teaspoons vanilla essence, (for bitumen)
  • green food color , (for bitumen)

Preparation

Preheat the oven to 350 F (180 degrees). Put the cupcakes in the cake mold.
Mix flour with baking powder, baking soda and salt.
With an electric mixer at medium-high speed, add butter and sugar until pale and fluffy. Reduce the temperature to medium and add the eggs, one at a time, beating well after adding each one. Add the yolks and stir well until everything is incorporated.
Reduce the speed and add the flour in three parts, alternating with the milk. Stir well and add the vanilla extract.
Divide the mixture between the cupcake molds and fill them 3/4 full.
Cook until they are ready, about 20 minutes. Pass to a cooling rack for 10 minutes.
Prepare the merengue bitumen: Mix the egg whites, sugar and salt in a small pot and put over another pot with boiling water. Move with a balloon whisk until the sugar dissolves completely. Put the mixture in a blender with the balloon whisk attachment. Beat at medium-high speed until peaks form. Continue beating until it cools about 10 minutes more.
With the blender in medium-low speed, add the butter little by little, stirring well after adding it. Continue beating (now with the normal attachment) until there are no air bubbles, about 2 minutes. Add the droplets of green dye in the blender (care that they paint a lot) until you get the desired color.
Put the green bitumen in a dulla with a small point with many openings (# 233). Start at the center of the cupcakes and moving upwards make the grass on top of the cupcake. Make some a little larger to look like real grass.
Decorate the cupcakes with Easter eggs of sugar or chocolate.

TIPS

You can also use this recipe and decorate it with any other sweet as with gummies in the shape of worms.

tengo dudas con la receta quiciera que me ayudaran ya que en la receta hay algunos datos un ´poco dudosos para mi. por un lado piden para la preparación de los cupcakes 5 yemas que en los ingredientes no salen, para el betún aparece 1/2 barra de mantequilla, 1/2 kilo cortadas en cucharadas y no coincide la cantidad de una cosa con la otra, en la leche la piden con limon, pero se le agrega a la leche???? no se corta??? ojalá me pudieran ayudar porque quiero hacerlos pero me detienen estas dudas.
