Delicious Christmas Butter Cookies

These Christmas butter cookies are eye-catching and very easy to prepare; you just need to use your imagination and decorate them in whichever way you like best. They are perfect for gifting or as part of your Christmas centerpiece.

  • 1 San Juan® egg, for the cookie dough
  • 1 egg yolk, San Juan® egg, for the cookie dough
  • 2 1/2 cups butter, in cubes, for the cookie dough
  • 1 3/4 cups icing sugar, for the cookie dough
  • 1 teaspoon salt, for the cookie dough
  • 1 teaspoon vanilla essence, for the cookie dough
  • 4 1/2 cups flour, for the cookie dough
  • 1 cup flour, for rolling
  • 2 cups whipping cream, for the filling
  • 1 cup cream cheese, in cubes, at room temperature, for the filling
  • 1/4 cups icing sugar, for the filling
  • green food coloring, for the filling
  • sugar sprinkles, in Christmas colors, for decoration (red, green, white)
  • fondant star, painted yellow or gold, for decoration

  • Beat the butter at medium speed with the paddle attachment until creamy and spreadable. Add the powdered sugar and mix. Add the San Juan® egg yolk, the San Juan® egg, salt, and vanilla essence; mix at low medium speed until the ingredients are combined, then it's time to add the flour. Remember not to overwork the dough. Once the ingredients are combined, wrap in cling film and refrigerate for at least 30 minutes.
  • While the dough rests, prepare the filling. Beat the whipping cream together with the cream cheese at medium speed with the whisk attachment; once the cream starts to thicken, gradually add the powdered sugar while continuing to beat, and mix well. Tint the mixture with green food coloring until the desired shade is achieved. Place the mixture in a piping bag with a star tip and refrigerate until use.
  • Preheat the oven to 170 °C.
  • Roll out the cookie dough on a floured surface to 3 mm thick, cut using a lid, ring, or round cookie cutter, in order to obtain 3 different sizes: 8 cm, 5 cm, and 3 cm, so you can later form the Christmas trees. Place the cut cookies on a baking tray. Bake at 170 °C for 13 minutes or until the edges are golden. Let cool once out of the oven.
  • Assemble your Christmas trees. Place the largest cookie as the base, add the filling in a rosette shape, and sprinkle with Christmas-colored sugar sprinkles, cover with the next size of cookie, and repeat until forming the tree, finishing with the cookies, meaning you should obtain 3 layers. Decorate with a fondant star. These Christmas butter cookies are perfect for gifting!
