2 envelopes unflavored gelatin powder, hydrated and melted
1/4 cups icing sugar

In a food processor, add the cinnamon cookies and process for 3 minutes.
Mix the cookies with the melted butter.
On a cake mold, place the cookie base and press well to compact.
Mix the milk with the instant coffee. Set aside.
Beat the cream cheese, add the whipping cream, and beat until it doubles in volume. Add the powdered sugar, vanilla essence, and gradually add the milk coffee and the hydrated gelatin.
Pour over the cookie base and refrigerate for 2 hours or until set.
Whip the cream until it doubles in volume, add the powdered sugar, the cocoa, and beat until integrated.
Using a piping bag with a smooth tip, add the whipped cream and decorate with cocoa powder.
