Delicious Jam-Filled Cookies

  • 1 egg
  • 1 egg yolk
  • 1 1/2 teaspoons vanilla essence
  • 3 1/2 cups flour
  • 1/4 cups pecans, ground
  • 1 teaspoon salt
  • 1 cup flour, to roll out

  • Preheat the oven to 170° C.
  • For the dough, beat the butter with the sugar until combined, add the egg, the yolk, and beat until incorporated. Add the vanilla extract, flour, walnuts, and salt, and continue beating until the ingredients are combined.
  • Remove the dough from the mixer, wrap it in non-stick plastic, and refrigerate for 40 minutes or until firm.
  • On a smooth, floured surface, roll out the cookie dough to 3 mm thick, using a circular cookie cutter to cut the dough. For half of the circles, make a hole in the center using smaller cutters.
  • Arrange the cookies on a baking sheet and refrigerate again until very firm. Bake for 8 to 10 minutes, remove from the oven, and cool.
  • Add a little jam to the cookies without holes and top with another cookie. Fill the center with more jam if necessary. Dust with powdered sugar and serve.
