  • 2 cups whipping cream
  • 1 cup pineapple juice
  • 1 cup coconut cream
  • 1 ounce rum
  • 14 grams unflavored gelatin powder
  • 1/4 cups sugar
  • 24 María cookies
  • 90 grams unsalted butter

  • We crush the cookies (set aside).
  • We melt the butter (set aside).
  • In a mold, we place the cookies and soak them with the melted butter, mixing well to incorporate the ingredients. (This step is like any classic cookie pie).
  • We blend pineapple juice, coconut cream, sugar, rum, and the gelatin (already hydrated) (set aside).
  • We whip the cream to medium peaks, lower the speed, and gradually add the blended mixture from step 4 (whip for just a few seconds to incorporate the ingredients).
  • Once the ingredients are combined, we pour the mixture into the mold with the cookies (and refrigerate).
