Delicious piña colada mousse with a touch of rum. It is a very tasty dessert that is perfect for a hot day, as its tropical flavor will delight everyone.
In a mold, we place the cookies and soak them with the melted butter, mixing well to incorporate the ingredients. (This step is like any classic cookie pie).
We blend pineapple juice, coconut cream, sugar, rum, and the gelatin (already hydrated) (set aside).
We whip the cream to medium peaks, lower the speed, and gradually add the blended mixture from step 4 (whip for just a few seconds to incorporate the ingredients).
Once the ingredients are combined, we pour the mixture into the mold with the cookies (and refrigerate).
