Chacá or Maíz Caquiao

It is a Dominican dessert that, although it takes a long time to prepare, is well worth sharing with family.

  • 1 cup corn, peeled and chopped
  • 4 cups whole milk
  • 1 cup brown sugar
  • 3 sticks cinnamon
  • 1 teaspoon butter
  • 1 teaspoon salt
  • 1 teaspoon vanilla essence, optional

  • Soak the corn overnight.
  • Boil the corn in a pressure cooker until it is very soft (which will take about 45 minutes).
  • Once the corn is very soft, place it in a heavy-bottomed pot, add the butter, milk, cinnamon, and vanilla; if necessary, you can add a little cold water, and cook over medium-low heat until the liquids reduce a bit.
  • Stir frequently to prevent it from sticking to the bottom, and add salt and sugar to taste. Boil until it reaches the desired consistency.
  • You can serve it hot, or cool it in the refrigerator before serving.
