Boil the corn in a pressure cooker until it is very soft (which will take about 45 minutes).
Once the corn is very soft, place it in a heavy-bottomed pot, add the butter, milk, cinnamon, and vanilla; if necessary, you can add a little cold water, and cook over medium-low heat until the liquids reduce a bit.
Stir frequently to prevent it from sticking to the bottom, and add salt and sugar to taste. Boil until it reaches the desired consistency.
You can serve it hot, or cool it in the refrigerator before serving.
