Dobos Cake (Cake with Caramel)

This dessert known as Dobos Cake, or Dobosh is a delicious Hungarian recipe. It consists of 6 different layers of cake filled with pastry cream. What stands out the most about the cake is the final touch of caramel.

  • 7 eggs
  • 3/4 cups sugar
  • 1 1/2 cups flour
  • 2 tablespoons vegetable oil
  • 250 grams butter
  • 1 cup icing sugar
  • 2 egg yolks
  • 150 grams semisweet chocolate
  • 1/2 cups cow's milk
  • 1 cup sugar, for the caramel
  • 1 tablespoon butter, (for the caramel)

  • Preheat the oven to 200 degrees Celsius. Whip the egg whites (from 7 eggs) to stiff peaks and add the sugar. Once mixed, add the yolks (from 7 eggs) one by one and add the oil. Remove from the mixer and fold in the flour gently.
  • In two greased and floured round cake pans, pour in the mixture and bake for 20 minutes. Remove from the oven and let cool.
  • Cut the cakes in half to end up with 4 equal thin cake pieces.
  • To prepare the filling, cream the butter with 1 cup of powdered sugar and add 2 yolks, one at a time. In a pot, heat half a cup of milk and add the chocolate in squares until melted. Mix and add the chocolate to the butter with sugar and yolks.
  • Spread the chocolate filling over one layer of cake and cover, then place another layer of cake on top and continue until finished (reserving one layer of cake for the top).
  • Put 1 cup of sugar in a pot over medium heat. Allow the sugar to melt and start caramelizing. When it's the color of caramel, add the butter and remove from heat. Pour over the reserved layer of cake and cover well. Cut the cake slices using a very hot and oiled knife. Let the caramel-coated slices cool. Once cooled, place the caramel slices on top of the cake.
