Double Chocolate Cake

  • 600 grams semisweet chocolate, for cooking
  • 1 1/2 cups coffee, freshly brewed American
  • 3 cups sugar
  • 2 1/2 cups flour
  • 1 1/2 cups cocoa powder
  • 2 tablespoons baking powder
  • 3/4 tablespoons baking soda
  • 1 tablespoon salt
  • 3 eggs
  • 3/4 cups vegetable oil
  • 1 1/2 cups cow's milk
  • 3/4 tablespoons vanilla essence
  • 1 cup whipping cream
  • 2 tablespoons sugar, for the frosting
  • 1/2 sticks unsalted butter

  • Preheat the oven to 180° C
  • In a bowl, mix 100 grams of chopped chocolate with the hot coffee, stirring constantly until the chocolate melts.
  • In another bowl, mix the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  • With a mixer, beat the eggs for 3-4 minutes; add the oil, milk, vanilla, and the chocolate-coffee mixture and beat until combined, gradually add the sugar mixture and continue beating until you have a cake batter.
  • Pour half of the batter into a greased and floured cake pan and the other half into the second pan, bake for 1 hour or until a toothpick inserted comes out clean.
  • Let cool and unmold.
  • For the frosting, chop the remaining chocolate (500 g), set aside.
  • Heat the cream with the sugar over medium heat and stir with a whisk until the sugar is completely dissolved. Remove from heat, add the chocolate with the butter and mix until combined. Chill for 30 minutes.
  • Spread the frosting on one of the cakes and top with the other cake. Decorate with the remaining frosting and some berries.
