Mix the flour, sugar, yeast, cinnamon, and salt until well combined.
Add the egg, vanilla, oil, and half a cup of hot water.
Mix all the ingredients until a uniform dough is formed that does not stick to your hands.
Make a ball with the dough and let it rest for 20 minutes, covering it with a cloth.
After 20 minutes and once the dough has increased in volume, roll it out with a rolling pin and use a glass to shape it, removing the center with a smaller one (it can be with a tequila shot glass).
When cutting the donuts, the dough should be between 2 to 3 cm thick for the donut to puff up well. Once cut, let the donuts rest for 10 minutes while we heat enough oil to cook them.
Fry them for 20 to 25 seconds on each side and let them drain on a plate with paper towels.
While the donuts drain a bit, we start hydrating the gelatin with the remaining hot water, flavorings, and colorings, and put it in the refrigerator for a few minutes.
After 10 minutes, take the gelatin out of the refrigerator and cover the donuts with it; use a knife to trim off the excess, and you're done.
Finally, place the crushed cookies on the donuts using the melted chocolate to ensure they stick well.
