Donuts with Chocolate Chips, Cherry, and Amaranth

My family and I love donuts, so I learned how to make them, and the best recipe is this one. After trying several, I adapted it to what my daughter likes: chocolate chips; my husband likes chocolate and cherries, and I prefer it with amaranth, which is very nutritious. So I thought of mixing the three flavors in the dough and the topping.

  • Sift the flour in a large bowl, make a volcano shape, and create a hole in the middle. Add a bit of sugar, the crumbled yeast, and 3/4 cup of warm milk, mix, and let it rest for 5 minutes for the yeast to foam.
  • Add the remaining ingredients: margarine, the rest of the milk, the eggs, the remaining sugar, and the nutmeg. Mix and start kneading with your hands until a stretchy dough forms. You can add a bit of flour to the table and knead the dough until it becomes elastic. Grease the bowl, place the dough to rest for an hour or until it doubles in size, covered with a cloth.
  • Once the dough has doubled in size, place it on a floured table, open it a bit, and mix in the chocolate chips, amaranth, and cherries. Knead until incorporated, shape the dough into donuts with your hands, and place them on a greased and floured baking sheet. Let them rest for another half hour.
  • After half an hour, fry them in a pan with very hot oil.
  • Once the donuts are fried, let them cool for 5 minutes. Decorate with melted chocolate mixed with a tablespoon of margarine, dip the donuts in the chocolate, and decorate with cherries and sprinkled amaranth.
