Cronut

  • 3/4 cups cow's milk, hot
  • 1 tablespoon active dry yeast
  • 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 cup butter, at room temperature
  • 1/2 cups icing sugar
  • 3 tablespoons maple syrup
  • 2 tablespoons whipping cream
  • vegetable oil, for frying

  • In a large bowl, mix the milk and yeast, add the sugar, eggs, and vanilla. Add 1 cup of flour and salt. Gradually add the remaining 2 1/4 cups, stirring constantly. Knead until a smooth dough forms. Transfer to a baking sheet, cover with plastic wrap, and refrigerate for 30 minutes.
  • Beat the butter and 1/4 cup of flour with a mixer until smooth. Place the cold dough on a floured surface and roll it out into a rectangle. Spread the butter mixture evenly over the dough. Fold the dough into thirds, cover with plastic wrap, and refrigerate for another 30 minutes.
  • Remove the dough from the refrigerator and roll it out again into a rectangle, then fold the two edges to the middle. Refrigerate for 30 minutes, repeat the folding and chilling sequence two more times, and finally let the dough chill for at least an hour.
  • In a large pot, heat 5 centimeters of oil until hot. Roll out the dough to 3 to 6 centimeters thick and cut into rings. Cook the cronuts in the oil and brown on both sides. Transfer to a plate with paper towels to remove excess grease.
  • Mix the powdered sugar, syrup, and cream for the glaze. Coat the donuts with the glaze while they are still hot.
