Transfer to a baking sheet, cover with plastic wrap, and refrigerate for 30 minutes. Beat the butter and 1/4 cup of flour with a mixer until smooth. Place the cold dough on a floured surface and roll it out into a rectangle. Spread the butter mixture evenly over the dough. Fold the dough into thirds, cover with plastic wrap, and refrigerate for another 30 minutes.
